Vegan Banana Bread

This subtly sweet bread is delicious and moist. The flavors combine to create a heartwarming loaf that’s perfect for breakfast, snack, or dessert.

What you'll need:

  • 2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon baking powder

  • 1/2 cup softened vegan butter

  • 3/4 cup dark brown sugar

  • 1/2 cup unsweetened apple sauce

  • 1/3 cup vegan yogurt (cashew, oat, or almond milk)

  • 2 cups mashed bananas (about 5 large ripe bananas)

  • 1 teaspoon pure vanilla extract

Steps:


1. Preheat oven to bake 350° Fahrenheit


2. Place dry ingredients in a medium bowl (flour, baking soda, salt, cinnamon, and baking powder) and whisk together. Set aside.


3. Place brown sugar and softened butter into a large bowl and beat on medium with an electric mixer until thoroughly mixed and a creamy texture.


4. Add mashed bananas one at a time and beat on medium with an electric mixer until thoroughly mixed.


5. Add apple sauce, vegan yogurt, and vanilla extract and beat on medium with an electric mixer until thoroughly mixed.


6. Add dry ingredients to the bowl with wet ingredients in thirds. Beat on low with an electric mixer until just combined before adding another third. Once you have added your last third, beat on low with an electric mixer until all clumps are gone


7. Prepare a 5"x9" bread pan with cooking spray, pour in batter and level. Placed in oven on 3rd rack from the bottom and cook for 1 hour (60 minutes).


8. Remove bread from the oven and allow to cool on wire rack before cutting. Enjoy!

Overview:


This bread is absolutely delicious. It's the perfect amount of sweetness and has an amazing texture. I used Trader Joe's vegan buttery spread but I typically bake with Earth Balance unsalted vegan butter sticks. Any unflavored vegan butter will work. I used cashew yogurt for this recipe but oat and almond milk yogurts work as well. Try to avoid coconut yogurt. If you do not have an electric mixer you can whisk the ingredients together. Make sure to stretch before and after.
